Chicory and Kiwi salad

Chicory and Kiwi Salad

Serves 6

3 heads chicory
5 ripe kiwis
3 tablespoons extra virgin olive oil
few sprigs mint
salt, freshly ground black pepper and sugar to season

Peel and chop the kiwis and place 1/3 in a large serving bowl. Mash well with a fork. Chop the mint finely and stir into the mashed kiwis with the olive oil. Season well. Check for flavour, adding a pinch of sugar if needed.

Trim the bases and remove the leaves from the chicory heads and add to the salad bowl.

Toss together well and scatter with the remaining chopped kiwi.
