Fig, Honey and Basil Tart

An easy, gooey, sweet sticky fig tart……….Drizzle all with the honey, sprinkle evenly with the sugar and dot with butter. Pick off a basil leaf and tuck one under each slice. Bake for 20-25 minutes until the pastry is golden and the fruit bubbling………dot with mascarpone and serve…..

9 figs
25 g  demerera sugar
2 tablespoons runny honey
25 g  butter
500 g sweet or shortcrust pastry
small bunch basil
Mascarpone or single cream to serve.

Preheat oven 200 C/400 F/ Gas 6.

Roll out the pastry to about a 30 x 35 cm (12 x 14 inch) rectangle. Gently prick the pastry all over with a fork. (really just to dent not pierce the pastry to stop it inflating when cooking) Slice the figs and lay out in a single layer on top of the pastry.

Tuck the edges of the pastry up by a couple of cm.

Drizzle all with the honey, sprinkle evenly with the sugar and dot with butter. Pick off a basil leaf and tuck one under each slice. Bake for 20-25 minutes until the pastry is golden and the fruit bubbling.

Leave to cool slightly before serving or you will burn the roof off your mouth…..Best served warm or at room temperature.
