Rock Sugar

Rock Sugar
As the name would suggest, this sugar comes in pale amber rocks. It has a sweet almost honey like flavour and adds a gorgeous delicate layer of sweetness to dishes. Use palm sugar and light brown sugar as alternatives, but don’t be too heavy handed with them as they will be more intense in flavour than the rock sugar.

    Is this like my mums coffee sugar she used for guests? It was in rocks and was varying degrees of brown.Think it was a seventies thing.

    • The coffee crystals that you are talking about, (that you can still buy now.) are similar, but rock sugar is more delicate and subtle, whereas the sugar crystals tend to have a deeper more caramelly flavour. x
