Spinach and Avocado Salad

We were hungry, it was quick and it was easy.

……about a tablespoon sherry vinegar, about 3 tablespoons extra virgin olive oil, or so, salt and pepper……2 really summery ripe avocadoes, a handful cherry tomatoes, a pile of young spinach leaves and some softly boiled eggs….deal done. Nice.

Little notes… you could add some black olives and you could add some anchovies…….
