Easy Tomato Tart – Nice and easy does it…..

Easiest tomato tart!…..Roll a piece of shortcrust pastry out til it’s about 1/2 cm thick….Slice tomatoes and spread evenly over…….Tuck a few basil leaves (I wrongly said bay leaves before!) under some of the slices…..Drizzle all with a little olive oil….sprinkle with a little salt and give it a couple grindings of black pepper……bang in a hot oven, about 200 C/180 C fan/Gas 7…..bake for about 20 minutes.

Slice the halloumi and when the tart is just about ready, lay the halloumi slices over the surface and return to the oven, until it has just softened.

We ate it with some dressed spinach leaves
