I didn’t actually get round to making the Roast Pineapple and Toasted Gingerbread until after the party, about midnight or so, when I sat round and caught up on the night with the Dj’s and friends Emma, Nicole, Greg, Tim and Tom (who had hand built the colossal sound system!) and drank pear cocktail …..Warm, sweet cooked pineapple with brown sugar and rum, served with a dollop of thick cream and slices of toasted Jamaican Gingerbread……. All recipes to be found in Dinner At Mine. They are very delicious…….
