This is what we served at the Dinner At Mine Market Day.
Vary the spices and amount of sugar to your own taste.
The quantities are approximate.
3 litres cider
375 ml Marsala (optional, but good)
250 g brown sugar, light, dark or demerara
3 cinnamon sticks
1 tablespoon black peppercorns
3 star anise
couple dried red chillies, split, (optional)
1 tablespoon allspice berries
3 little pears, each studded with about 8 cloves
3 little apples, each studded with about 8 cloves
4 clementines or satsumas, sliced
1. Tip all into a pot, bring to a boil, stirring occasionally to dissolve the sugar, then reduce heat and simmer for about 30 minutes. Serve now, and keep on a very low heat, or leave to cool and reheat in small amounts as needed.
