Veg Box No.15 – Mid winter……Early January

Surely all this dark green stuff is gonna be good for me….and look, lots of different coloured carrots which will help to put some sunshine in my winter dinner….
So here we have it, veg box No.15 from Organic Wick 
1 Savoy cabbage
2 large leeks
A swede
A bunch of Cavalo Nero….
Some spuds…..
Those coloured carrots I mentioned above….
A pumpkin…which I think is a Kabocha Squash (Japanese Pumpkin or sometimes referred to as Winter squash)


…….So I’m thinking that much of this all screams to be made into a Ribollita, (a rich Tuscan Bean soup) of which Cavalo Nero is an essential ingredient…….
…….and as Kabocha has a good dry texture, this will be perfect to make Pumpkin Gnocchi, which I may fry with rosemary or sage, rather than boil……
…..then Leek, Cabbage and Potato cakes or Colcannon topped with a poached egg……or a Leek and Potato Dauphinois tart…..
…..for the swede I’ll get a  haggis……..
….winter warming, comfort food…….
