Cabbage and Potato Cakes recipe…..Nice and easy does it…..serves 3
3 large baking potatoes, about 700 g total weight
1 tablespoon grainy mustard
50 g Parmesan, grated
3 tablespoons vegetable oil
1 red onion, finely chopped
2 rashers bacon, cut into little strips
¼ cabbage, finely shredded
2 tablespoons plain flour
6 eggssalt and freshly ground black pepper
Preheat oven 200 C/Gas 7. Prick the potatoes a couple of times with a fork and bake for about an hour or until tender.
Mash the potato well, skin and all, with the butter and mustard. Stir in the Parmesan and season.
Heat 1 tablespoon of oil in a frying pan and add the onion and bacon and fry until softened and just starting to brown.
Add the cabbage to the pan, season and stir fry for a moment, then bang on a lid and cook for a few minutes, stirring once more, until the cabbage is just tender.
Tip the cabbage, onion and bacon mixture into the mashed potato and mix well. Check seasoning, then divide the mixture into 6 and shape into flat cakes.
Heat the remaining oil in a large frying pan, (or cook in batches) lightly toss the potato cakes in flour, shaking off any excess and fry the cakes for a few minutes each side until golden and lightly crispy.
Poach eggs and pop on top……
So bloody good…..
